Good Use for the Good Food in my Good Food Box

I recently purchased my first good food box. I opted for the large one because, although I didn’t know what would be in it I know that my family tends to eat a lot of produce so I was fairly confident that I could find a way to use all the food or possibly give away what we would not use.

Turns out there was nothing out of the ordinary for us in it but there were a few things that we don’t typically eat/husband and or little man won’t eat if not cleverly disguised.

I should have written down an inventory of the box when I first got it but I did not. Here is a list of everything I can remember and hopefully I get most of it.

1 lg. bag of potatoes, 1 bag of onions, 2 butternut squash, 1 yam, 2 garlic bulbs, 1 head of cauliflower, 1 head of green cabbage, 1 head of iceberg lettuce, 4 avocados, 5 roma tomatoes, 1 cucumber, 4 orange peppers, 2 bags of carrots, oranges (6ish), apples (6ish), 2 lemons, 1 honeydew,  1 bunch of bananas, and 2 grapefruits.

I think that about covers it. The main things that I knew right away I would have to do something different with were the squash, yam, cauliflower, and some of the potatoes. (we aren’t big potato eaters so after mashed and hash browns I am kinda out of ideas) Having so many avocados and tomatoes also required a little creativity and we also can’t usually finish a whole honeydew.

So here is a the list of things that I made or am planning on making with what was in my box. Hopefully you find it even a little helpful in using up your produce and feeding your family healthy food. I have included a link to online recipes that I have used or am planning on using.

Squash – Butternut Squash pumpkin spice muffins

Sweet Potato – Sweet potato bran muffins (I know 2 batches of muffins, but healthy muffins are our go to, on the go snack or breakfast when we are rushed)

Cauliflower – by far the most challenging because the husband always notices if I try to hide it. We will probably try these cauliflower tots that little man might like and maybe this cauliflower broccoli salad

Tomato, avocado, cucumber, pepper – all roughly chopped and mixed with oil, vinegar and spices (garlic, salt, pepper, maybe some cayenne, onion powder, oregano whatever feels right) served with rice and chicken

Avocado – chocolate avocado pudding

Cabbage, carrots, apples – coleslaw served with pork and rice

Cabbage, carrots, potato, onion, tomato – cabbage soup (probably to go in the freezer for individual servings to quick defrost since my men don’t really like this type of soup)

Honeydew – chopped up, eat half and freeze other half for smoothies or I might try making sherbet with it

Apples – we just eat but there is always pie, crisp, apple oatmeal, or baked apples

Oranges, grapefruit, lemon – we just eat or put in water but there are some very interesting citrus salad recipes

Bananas – again eat, and Banana bread/muffins, I also came across this recipe for healthy banana cookies

Lettuce, peppers, tomatoes, avocados, onions, carrots – we used for salad, and chopped for tacos and burgers

Potatoes – so far we have had hash browns, fortunately potatoes ted to keep for quite a while so we also plan on having roasted and mashed, maybe on shepherds pie and I would like to try some potato pancakes and maybe some potato bread and potato soup on a cold day

Potato, Onion, and carrots, garlic – foil dinner on the BBQ with steak

Carrots – we will mostly just cut and eat for snacks, but they also went into a few things listed above

Peppers – included in a few of the lists above but might still pose a problem, fortunately they can be cooked down pureed and added to things discreetly. A person might also try stuffed peppers but again my men won’t eat them that way.

I didn’t list onion and garlic specifically for 2 reasons, first, they seem to go into everything I make anyway and second, they last a really long time if stored nicely so there should be no problems using them up before their time.

One more thought, if I still had a wee one that was eating baby food I would have also pureed a lot of the produce for baby food, frozen in ice cube trays. My little man is 2 1/2 yrs now so we are past that stage but you can be sure when this baby comes I will defiantly be using some of my veggies for food for him.

Post #2 – Where I’d Like to be in 10 years.

OK so i know i am geting off to a bad start but yesterday was a terrible day, was sick and at work and in no mood to be writting anything. But i will do 2 today and then i will be caught up and ready to go tomorrow.

Post #2 – Where I’d Like to be in 10 Years

This is a funny topic I think. Although I believe it is good to set goals and have something to aim for sometimes it feels a little pointless because that thing has a tendency to change and often.  About a year ago if you would have asked me this question I would have said: living somewhere in rural Alberta/Canada as the wife of an RCMP officer, with maybe 3 or 4 kids. Maybe by that time I would have my own coffee shop/used book store. But that was a year ago and now where I think I am headed or where we are aiming for is so different from that.

In 10 years I see myself probably living in another country, speaking a different language, ministering to the women of the community that we live in. Sweeping a dirt floor?  Making sure my kids are safe? (yes in my 10 year “plan” I still have children) Eating plantains and black beans? Maybe…

I think in 10 year I would like to be playing the piano well enough to play along with Jordan on his guitar. I would like to have a fairly extensive library. I would like to have read all the books in my library. Maybe I will have taken a class to teach English as a second language. Maybe I will be fluent enough to be a translator.

But all these things are just maybe. Because as we walk with God and follow him where he wants to take us he changes the path we think we are on to the path we should be on. I feel as though it is an ever-changing road and if we can lock on to Gods leading as opposed to what we think is the final goal it becomes a lot less scary and a lot easier to roll with the punched and just follow.

I heard someone say one time as a blessing “may you be covered by the dust of your rabbi”. This is ultimately where I want to be in 10 years, covered by the dust of Jesus from following him so close.

30 Posts Challenge

We all know how much trouble I have blogging on a regular basis. I don’t understand it really. I am on the computer everyday and I defiantly spend some of that time just surfing around the internet or wandering the pintrest (pintrest.com) world for inspiration. So why I don’t just log on and blog something is beyond me. Any how here I am now with a new strategy. I am starting a 30 day writing challenge. Some will be long others will be short but I am going to write an entry a day (except weekends) either way.

Post 1 – Your current relationship.

My current relationship.

On April 5, 2008 I married my best friend, Jordan Barnes. We have been extremely, sickeningly, ecstatically happily married for 3 years now. Not to say that it hasn’t had its down moments, and defiantly not saying that it has been an easy cake walk but it has been wonderful.

I read something interesting the other day that seems appropriate to share here:

You fall in love by chance not by choice. You stay in love by work not by chance. And no one falls out of love by chance it is by choice.

I don’t think this could be anymore true. Right at this moment I can say that I have a wonderful marriage but I can also say that it has come as a result of everyday work.  Sometimes working at it when I don’t want to and sometimes bearing the consequences of not working at it when I should have been.  I also don’t presume that it will be wonderful from now on, that we will never run into hard times or that at some point we will be able to stop working at it and just coast.  3 years ago when we exchanged rings and said our vows in front of our friends and family we were serious, this is it, for life and in that moment we committed to continue to work at our marriage day in and day out until the day that we die.  It might sound like an aweful lot of work but as someone else said “no said it would be easy, just promised it would be worth it” , and that couldnt be more true.

It looks gorgeous outside today!

The perfect day for BBQing at house of Barnes with my hubby, eating and chilling on the balcony with our cats and dog.  This is going to be a good evening.  Some of the best times we spend together and the best quality time is out there, even if we are just both reading it is the most comfortable silence in the world. 

A good day for a run I think, I was going to try to run yesterday even if it was going to be in the rain but alas change of plans and no run 😦

It might also be a good day for getting a little dirty. I know it is extremely late to be planting anything but here is the story.  We got back from vacation right at the beginning of the planting season but being that we were on vacation we had no money to buy plants, now it is taking us longer than expected to get back ahead so there is still no money for plants, but I was doing a little spring/summer organizing and found 2 packages of seeds that didn’t get planted last year so I thought “why not try it” they might be too old, or it might be too late to get any flowers from them but it will give me a few seeds and hopefully some tiny plants over the summer to nurture and who knows I managed to keep a tomato plant alive over a whole winter maybe I can manage a few flowers too.

I really do hope that it is still nice by this evening, who k nows if it stays sunny maybe it will even be moderately warm by this evening.

And thus concludes Lent

So it is officially after Easter,  and I just kicked some major lent butt.  I spent 40 days off of Facebook, yes not once during the 40 days did I even open the Facebook homepage.  From logging on at least once a day to nadda. It is funny though because my fingers still remembered where they were so used to going. often when I opened up a new browsing page my hands would start typing www.faceb before I had even really thought about where i was trying to get to online.  Funny how your fingers have a “memory” anyway after a few days weeks of that there was almost no temptation. Well that isn’t entirely true, people would often say to me “did you see those pictures on Facebook” like they knew that would be a particular weakness.  I have realized a few things over this 40 day period though. #1: Facebook is not a total and complete waste of time, there are useful aspects of it and #2 I have almost no desire to log on and just surf around and waste time on it any more.

When I started I thought that by the end I may just cancel my account al together, but it turns out to be a very effective way fo communicating with people sending them messages. and although technology should never replaces actual physical communication sometimes it is nice to send a nice little note to people not to mention communicating more regularly with people who are long distances away.

All in all it was a great experience and accomplishment, I am quite proud of myself for completing for 40 days, and I will defiantly be doing it again next year. I think maybe next year I will try something even a little more challenging.

12 more sleeps

There are only 12 more sleeps left before we arrive in London and all will be right with the world again as “the 4 of us” will be together once again.  Words can’t even describe how much I miss Bernine but not only that,  how I miss Bernine, Allen, Jordan and I hanging out together.  And in a few days we will have almost 3 whole weeks of togetherness.  And what an epic adventure it is going to be. London, Amsterdam, Gouda, Paris and everything in between.  Long train rides, sleep deprivation, cramped airplanes, small sleeping quarters it is all so exciting, but I think the most exciting part is that we get to experience it together and we have this opportunity to really bond and see our friendship grow, as if we weren’t close enough and comfortable enough with each other already this is just going to sqeeeeeze us that much closer.

Europe is a fantastic place full of culture and what better way to discover it then with 3 of my best friends.

I am a terrible Blogger

So as I sit here and drink my latte I literally had the thought “i suck at blogging” I havent written a post in so long. To be fair I have been extremely busy lately with both my parents and in-laws gone but they will be back soon and then I will have much more time of my own to muse.

Just some thoughts

1)I am considering several projects for my house including but not limited to: shelves in my kitchen, shelves and hooks in the bathroom, a total balcony redo including giving a couch and  a table and chair set a second life. The balcony one might have to be on the sly because my husband thinks that we should ditch them both and get new ones, but I really like the idea of and ambitious project and I will post before and after pictures of all of it.

2)I am trying to get through a list of 100 books in one year. This is proving to be very difficult as I discovered that I will have to read 8 books a month, and some of the books are not one book but a whole series, and I have been on one book since the beginning. To be fair, I have read several of the books while reading the “big one”. “The big one” is Gone with the Wind and I have almost conquered it, I am so so close to being done, and when my sister comes home for a visit we are going to watch the movie together which really really excites me.

3)We are going to Europe in exactly 1 month and I am so so excited not only to see my bestie who I havent seen in 4 months but also to travel Europe with my husband and best friend, and probably 2 of 3 of my favorite people in the world. 🙂 (yes i just used that happy face symbol, that is how excited I am)

that is pretty much all I have to say for right now. If there is anyone reading this i hope you enjoyed a little glimpse into my life.
